Chestnut mushrooms (Pholiota adiposa) are a robust, full-flavored variety with tawny brown caps and a satisfying density that makes them ideal for hearty cooking. Less common than Shiitake but arguably just as versatile, Chestnut mushrooms are a staple of More Than Before Co.'s lineup because they represent exactly what we love: something exceptional that most people haven't tried yet.

Deep, nutty, and earthy — with a slightly sweet finish and a firm texture that doesn't go soft when cooked. They absorb flavors beautifully without losing their own character.
Best Uses
Roasted whole with rosemary and garlic, stirred into mushroom risotto, layered into savory tarts, or slow-cooked into a ragù that tastes like it simmered for hours.
Why It’s Good for You
Like most specialty mushrooms, Chestnut varieties are rich in beta-glucans for immune support, along with B vitamins, copper, and dietary fiber. Their antioxidant content makes them a great addition to any anti-inflammatory diet.
How We Grow It
Chestnut mushrooms grow in dramatic stacked clusters with gorgeous golden-brown caps. We grow ours on supplemented hardwood, allowing full colonization before a controlled fruiting trigger — the result is a dense, aromatic cluster with maximum flavor development.
